The creation of the first truffle was possible because of the invention of the cocoa press and the subsequent separation of cocoa butter. When the butter was removed from cocoa beans, the remaining powder was used to create solid chocolate. In 1879, Swiss Henri Nestle and Daniel Peter prepared milk chocolate using solid chocolate and milk powder. Experiments in Switzerland and France resulted in the invention of ganache, the main component of a truffle.

As the concept of chocolate truffles gained popularity, a range of truffle textures were prepared using white confectioner’s sugar onto which the center ganache was rolled. To develop flavors, Champagne and liqueurs were used.
