It's summer and time for barbecue dining. We all know the traditional bbq recipes; blackened sausages, burgers, steak, chicken, and kebabs, with bread rolls and a bit of salad. But this year, how about trying something different? Start with good quality ingredients, at their tasty seasonal best. Use fresh meat and fish. Newly-picked home-grown lettuce tastes better than supermarket ones. Add some home-grown rocket and herbs, to vary the taste. By mid-summer home-grown tomatoes, onions and cucumbers should be available too, and taste wonderful. Make your own vinaigrette dressing by mixing 5 tablespoons of olive oil with the squeezed juice of a lemon and a tablespoon of wholegrain mustard. And why not try pitta or flat breads instead of burger rolls? Summer recipes are about light, fruity tastes. Here are some to try at your next barbecue. Salmon with Lime Make a marinade with the juice of a lime, a tablespoon of olive oil, a crushed garlic clove, half a teaspoon of ground ginger and half a teaspoon of sugar. Pour the marinade over four salmon steaks and let chill for an hour. Remove the salmon from the marinade and barbecue for 10 minutes each side, brushing with the remaining marinade. Avocado Relish Peel and chop one avocado, chop and deseed one red chilli, and chop 1 red onion. Mix all together with a squirt of fresh lime juice and a pinch of coriander BBQ Bananas Put the bananas, skin still on, onto the barbecue for 15 minutes till blackened. Split open, sprinkle the fruit with lemon juice and sugar, and serve with ice cream. Grown-ups can add a dash of Bailey's Irish Cream too!
