Some people say that the Mexicans today are so skilled when it comes to the preparation of food and the way that they use such a variety of different ingredients and elements to make something really special, due to the sometimes harsh environments found in the country itself. Going back centuries it is certainly true to say that the locals had to diversify their approach to cooking and their basic dietary requirements as much of the country is known for relatively arid conditions. The mountainous areas that cover much of the central part of the country have desert like properties in many respects and many of these communities are very high above sea level, dictating just what can and what cannot grow there. In those early days people became accustomed to eating according to what they were able to produce, but innovation and ingenuity, combined with different microclimates and the Mexican propensity to share and develop together led to considerable diversity. When the Europeans arrived during the beginning of the 16th century they brought a lot of change. For example, they arrived with a large variety of herbs and spices, sheep, goats, pigs and cattle, together with vegetables and fruits that were previously unseen. Over time all of these food ingredients became incorporated into native food dishes and suddenly those options which were based on corn or bean derivatives took on a very different look and taste indeed. If you've ever had a propensity to experiment in the kitchen and have a family to feed who would like to experience different flavors and tastes, you really have to investigate Mexican recipes when you're next stuck for some dinner ideas. It's really amazing what kind of experience you can create when you combine wholesome, fresh basics with an infusion of fruits, vegetables, herbs and spices. It's not unknown for Mexicans to incorporate 25 or 30 different, but carefully selected herbs and spices into one particular creation. It's easy to see why Mexican food has such a reputation for being spicy, colorful and vivacious. For more than 4000 years Mexicans have viewed corn as the "gift of the gods" and it's most certainly the cornerstone of the typical diet. Corn is used to make those tortillas and tacos. The tortilla is used as a container, essentially, within which you can put a variety of different meats, ingredients and sauces. Local experts contend that the tortillas and tacos seen in typical US fast food restaurants are nothing like the original item you may expect to see on a dinner table south of the border. If you get a chance try and find an authentic Mexican restaurant; you know one of those which are hidden away in a suburban shopping mall somewhere. The chances are you will get a real taste for how Mexican food should be cooked and can even ask them if they will give you some recipes for you to experiment at home with. You'll never look back once you discover just how tasty and exciting food can be when prepared this way.
