Maine lobster is classified into two categories †hard-shell lobster and soft-shell lobster. Summer is the season for soft-shell lobster. The soft ones are sweeter in taste, but have less flesh content than the hard-shell lobsters. Unlike, soft shelled lobsters, hard ones can survive long distance shipping and hence they are exported to different places. This makes seafood dinner available to not only the Maine residents, but people living at other destinations as well.
