Steak Broiling In Oven - How Do I Broil Steak In The Oven?

By: Roberto Bell Home | Food-and-Drink | Cooking

Just recently I have been flooded with the question how do I broil steak in the oven? A broiler needs little introduction, but a lot of people do not know exactly how to use it especially when dealing with meat. A broiler can be an effective way to cook steak in the oven when you do not have access to a grill. We have talked about how to bake a steak, a similar technique compared to how to broil a steak in oven. An oven cooked steak is very different compared to the taste of steak that broiled or grilled. What gives grilled meat the taste is a chemical process called the Maillard reaction. This process is the term for the browning of meat. The Maillard reaction, along with the flavors imparted by a wood or charcoal fire, is the main difference between cooking in a stove and actual grilling. Solely baking steaks does not have the same Maillard reaction. When I refer to solely baking steaks I am talking about a dry, surround heat, in a conventional oven, no fan for convection. My biggest advice is that you do not cook this way without also broiling the steaks. I will try to explain a better technique on how to successfully serve an oven cooked steak using the broiler. A popular question arises of how long do you broil steak exactly? The key is to look at this as a two step process. Unlike our baking technique, when broiling we oven bake first in order to pre-cook the steak. Place your seasoned steak on a sheet tray and place it in a preheated conventional oven for 7-8 minutes in a 325 degree oven. A thick cut 1 to 2 inch steak may take longer. Remove from the oven and let stand. Do not let the steak sit for more than an hour. With this technique we are cooking the internal portion of the steak first. This process is followed by actually broiling the steak. With the same pan, place steaks no more than 3 inches from a well heated broiler. If you are not familiar with broilers, it is top down heat which means your steak will only cook on the top side, one side at a time. At this point our oven cooked steak is cooked and we want to achieve some browning for the maillard reaction. Typically it only takes broiling the steaks a few minutes on each side. We are simply looking for some browning for flavor. Some chefs will brush honey or a sweet glaze to get the steaks just that much more browner. Another question many people are asking is what temperature do you broil steak? Most broilers will give you two options high or low when it comes to temperature control. With this technique of broiling steaks we commend the high broiler setting. Remember, steaks are already cooked we are simply trying to achieve some browning. Steak broiling in oven is a very popular way to cook many steaks especially inside. To learn more about the broiling process along with other grilling methods visit www.efoodschool.com.
